摘要
亚硝酸盐作为一种常见的食品添加剂,能够稳定肉制品的色泽、促进风味、延长货架期。同时,亚硝酸盐又是一种有毒的污染物,过量的摄入将对人体造成很大的危害,因此对其进行快速高效检测具有十分重要的意义。与其他传统检测方法相比,电化学检测法具有操作简单、选择性好、灵敏度高等优点,因此受到了人们的广泛关注。电极材料作为电化学传感器的核心组成,其功能和界面性能都将影响到传感器的综合性能。本文详细介绍了金属、金属氧化物、导电聚合物等纳米复合材料在亚硝酸盐电化学检测中的研究进展,重点详述了构建方法和检测结果。
As a common food additive,nitrite can stabilize the color,promote flavor and prolong shelf life of meat products.At the same time,nitrite is also a toxic pollutant.Excessive intake of nitrite will cause great harm to human body.It is of great significance to detect nitrite quickly and efficiently.Electrochemical detection has attracted wide attention because of its simple operation,good selectivity and high sensitivity.As the core component,the function and interface performance of electrodes will affect the comprehensive performance of electrochemical sensors.In this paper,the research progress of metal,metal oxide and conductive polymer nanocomposites in the electrochemical detection of nitrite was introduced in detail,which focused on the construction method and detection results.
