摘要
建立了一种快速、准确的测定玉米粮食中粗淀粉含量的方法。在碱性介质中,淀粉水解液在沸水浴条件下与铁氰化钾发生氧化还原反应生成亚铁氰化钾,于418 nm处测反应液吸光度。该方法反应液的吸光度值与直链淀粉含量具有良好的线性反比关系,相关系数为0.9996,相对标准偏差小于0.5%。铁氰化钾-紫外分光光度法具有分析速度快、准确度高、重现性好等特点,适于大批量玉米粗淀粉含量的分析检测。
A rapid and accurate method for measuring the content of crude starch in corn by potassium ferricyanide-ultraviolet spectrophotometry has been developed.In an alkaline medium,starch hydrolyzate reacts with potassium ferricyanide in boiling water bath to form potassium ferrocyanide,and the absorbance of the reaction solution is measured at 418 nm.The absorbance value of the reaction solution has a good linear inverse relationship with the amylose content,the correlation coefficient is 0.9996,and the relative standard deviation is less than 0.5%.Such method has the advantages including fast analysis,high accuracy and good reproducibility.It is suitable for the measurement of starch content in a large amount of corn.
