摘要
随着生活水平的提高,人们越来越关注生活中所食用生物产品的营养价值。脂肪酸作为油脂的主要成分,具有很多特殊的生理功能。本文着重比较了不同脂肪酸衍生化方法对多种油脂中脂肪酸组分的定性定量分析结果,同时提供了一种可用于微量油脂检测的脂肪酸分析方法,以期为相关领域的研究和检验人员提供参考和借鉴。
With the improvement of living standards,people are paying heavy attention to the nutritional value of biological products.Fatty acids as the main component of oils and fats,have some special physiological functions.The objective of this article is focusing on comparing the qualitative and quantitative analysis results of different fatty acid derivatization methods for fatty acid components in various oils.This work may provides a fatty acid analysis method that can be used for trace oils and fats;in addition,it provides new ideas for related researchers.
