鮟鱇鱼皮营养成分分析与评价 被引量:2

摘要 以鮟鱇鱼鱼皮为研究对象,对水分、粗蛋白、粗脂肪、灰分、矿物质元素含量及氨基酸、脂肪酸组成进行分析。结果表明:鮟鱇鱼皮水分含量为84.60%,干鱼皮中总蛋白含量为78.85%,脂肪含量为2.70%,灰分含量0.37%,含有7种人体必需氨基酸,占氨基酸总量的15.40%,脂肪酸中DHA、EPA总量为22.93%,有益于人体生长发育。上述分析结果表明,鮟鱇鱼鱼皮高蛋白、低脂肪,富含多种营养成分,具有良好的市场开发前景。 The paper analyzes and evaluates the nutrient composition and nutritional value of Lophius litulon skin.According to national standards,the basic nutrients contents,amino acids,fatty acids and elemental composition were mainly analyzed.The results show that the moisture content of L.litulon skin is 84.60%,the total protein content of dried fish skin is 78.85%,the fat content is 2.70% and the ash content is 0.37%,it also contains 7 kinds of essential amino acids,accounting for 15.40% of total amino acids,in fatty acids,the total amounts of DHA and EPA are 22.93%,which are beneficial to human growth and development.In summary,the analysis of nutrients showed that L.litulon skin has high protein,low fat and high nutritional value,it is beneficial for functional health care.
