摘要 姜黄素是一种从天南星科和姜科植物根茎中提取的多酚类化合物,其分子结构为含β-二酮的庚二烯和两个邻甲基化的酚相连所组成,是世界卫生组织和美国食品药品管理局以及多国准许使用的食品添加剂,目前为世界上销量最大的天然食用色素之一,也是常用的中药之一。
