摘要
峇峇是马来西亚和新加坡的本土化华人,在殖民地时代被称为海峡华人,马六甲的峇峇在家讲“峇峇马来语”,这是本土化的一个特征。他们的饮食被称为娘惹菜,也经历了本土化。娘惹是对峇峇女性的称呼。娘惹菜为马来西亚和新加坡的人们所熟知。娘惹菜是马来西亚环境下华人和非华裔文化交流的本土化产物。文章描述六种娘惹菜的配料及制作方法,旨在说明峇峇食物的本质。
Baba are localized Chinese in Malaysia and Singapore.They were known as Straits Chinese during the colonial period.The Baba in Malacca speak Baba Malay at home,which is a feature of localization.Their food is popularly called Nyonya cuisine,and it is a product of localization.Nyonya refers to Baba women.Nyonya food is well-known in Malaysia and Singapore,and it is a localized product of cultural interaction between Chinese and non-Chinese in Malaysia.In this article,the author explains the nature of Nyonya food by describing six recipes collected from fieldwork.
