摘要
建水汽锅鸡是云南特有的饮食文化代表之一。文章梳理了汽锅鸡的历史及其发展,并从炊具和食材的角度分析了紫陶汽锅鸡的特色。由此,根据紫陶汽锅的特性和构造,解读了汽锅鸡烹制的“蒸”“炖”合一、汽锅的“聚能”以及对食材“本味”影响的三个特色。
Jianshui steam pot chicken is one of the representatives of the unique food culture of Southwest China's Yunnan Province.This article combs the history of steam pot chicken and its development,and analyzes the characteristics of purple pottery steam pot and chicken from the perspective of cooking utensils and food materials.With the features and structure of the pot explained,the paper goes on to interpret three characteristics,namely,the combination of“steaming”and“stewing”in the cooking process,the“energy accumulation”of the steam pot,and its influence on the“original taste”of food materials.
