铝的毒性和膳食暴露评估研究进展 被引量:12

Advances in research on toxicity and dietary exposure of aluminum

摘要 近年来,食品中含铝添加剂的使用受到公众的广泛关注,许多研究均表明铝的过多暴露会对人体造成健康损害,将从铝的毒性、国内外膳食铝暴露评估研究进展及可行性控制措施3方面来综述,为食品中铝的健康风险评估研究提供相关依据。 In recent years,the use of aluminum-containing additives in the food has received wide public attention.Many studies have shown that excessive exposure to aluminum can cause health damage to human body.This paper will review and evaluate the research progress of aluminum toxicity,domestic and international dietary aluminum exposure assessment,and the feasibility of the control measures on the aluminum intake,to provide relevant evidence for the health risk assessment of aluminum in food.
