摘要
以锡林郭勒盟酸马奶为研究对象,采用国标方法检测其大肠菌群、沙门氏菌、金黄色葡萄球菌、乳酸菌和酵母菌,通过比较分析进行卫生学评价。结果表明,大部分样品大肠菌群数值较低,小于1 mL^-1,沙门氏菌未检出,金黄色葡萄球菌数值均小于10 mL^-1,乳酸菌数集中分布在1.0×10^7 mL^-1到1.0×10^9 mL^-1之间,酵母菌数集中于分布与1.0×10^5 mL^-1到1.0×10^7 mL^-1之间。总体来说,锡林郭勒盟酸马奶卫生质量较好,无沙门氏菌和金黄色葡萄球菌污染,大肠菌群污染程度较小,食用安全风险较低。
In this study,Koumiss were taken as samples in Xilingol league,which used the national standard methods to detect coliforms,sal monella,staphylococcus aureus,Lactic acid bacteria and yeasts and did health evaluation by comparative analysis.The results indicated that the numbers of coliforms were lower than 1 mL^-1 in mostly Koumiss.Salmonella were not detected and the numbers of staphylococcus aureus were lower than 10 mL^-1 in all samples.The numbers of Lactic acid bacteria were concentrated between 1.0×10^7 mL^-1 and 1.0×10^9 mL^-1 and the numbers of yeast were mostly distributed between 1.0×10^5 mL^-1 and 1.0×10^7 mL^-1.Overall,hygienic quality of Koumiss in Xilingol league was satisfactory.They had neither salmonella contamination nor staphylococcus aureus contamination,the concentrations of coliforms were smaller and edible safety risk was lower.
