硫酸铜及温度对维生素A稳定性的影响 被引量:3

摘要 试验采用2因素完全随机分组设计(2×2×3),贮存温度设定2个水平,分别是15℃和40℃(贮存湿度统一设定为65%),铜源为五水硫酸铜和包被硫酸铜,贮存于恒温恒湿箱中。试验周期37 d,分别于第0 d、第18 d和第37 d取样,共3个水平,每个处理3个重复。采用高效液相色谱法维生素A含量,取样后8 h内完成测定。采用SPSS.20统计软件分析上述2种因素对维生素A稳定性的影响。结果表明,贮存温度及硫酸铜对维生素A的稳定性均有极显著影响(P<0.01),包被硫酸铜相比五水硫酸铜能显著降低维生素A的损失率(P<0.01)。 The purpose of the experiment was to study the effect of temperature and copper sulfate on the stability of vitamin A.The experiment adopted a 2 factor completely random grouping design(2×2×3).The storage temperature was set at 2 levels,respectively 15℃ and 40℃(the storage humidity was set at 65%).The copper source was copper sulfate pentahydrate and coated copper sulfate,which were stored in a constant temperature and humidity box.The test period was 37 days.Samples were taken at 0 d,18 d and 37 d,respectively.There were 3 levels in total and 3 repetitions for each treatment.The content of vitamin A was determined by HPLC within 8 h after sampling.SPSS20 statistical software was used to analyze the effects of the above two factors on the stability of vitamin A.The results showed that the storage temperature and copper sulfate had a significant effect on the stability of vitamin A(P<0.01),and the loss rate of vitamin A could be significantly reduced by coating copper sulfate compared with copper sulfate pentahydrate(P<0.01).
