摘要 随着绿色健康饮食观念的深入人心,仅次于葡萄酒的世界第二大果酒苹果酒,因其优质、低度、营养、保健而备受社会各界人士的关注和喜爱.如何得到口感风味俱佳的高品质苹果酒,将苹果资源合理利用是亟待解决的重要问题.本文阐述了苹果酒在国内外的研究现状及我国苹果酒在发展过程中存在的问题,提出了提高苹果酒品质的技术方法,为研发苹果酒新品提供理论指导和方法参考. With the concept green and healthy diet becoming more and more popular.cider,the second largest fruit wine in the world after wine,which has attracted the attention and love of people from all walks of life due to its high quality,low degree,nutrition and health care.How to get high quality cider with good taste and flavor and how to use apple resources rationally is an important problem to be solved urgently.This paper expounds the research status of cider at home and abroad and the problems existing in the development process of cider in China,and puts forward the technical methods for improving the quality of cider,so as to provide theoretical guidance and method reference for the research and development of new cider products.
