摘要 目的了解开封市售食品中食源性致病菌的污染分布状况,为预防和控制食源性疾病的发生提供科学依据。方法依据《全国食源性致病菌监测工作手册》要求,对开封市售12大类食品采样并进行检测。结果2016-2018年共检测样品294份,其中51份样品中检出67株致病菌,致病菌检出率为17.35%。构成比居前的食源性致病菌是沙门氏菌、空肠弯曲菌以及副溶血性弧菌。检出率居前的几种食品为生禽肉(95.00%)、熟制米面(56.25%)、水产品(25.45%)、动物血制品(25.00%)。结论开封市售食品中致病菌污染状况总体良好,但部分品类仍存在安全隐患,必须采取针对措施,加强监督管理,预防食源性疾病的发生。 Objective The purpose of this paper is to explore the distribution of food borne pathogens in Kaifeng City,and to provide scientific basis for the prevention and control of food borne diseases. Methods According to the national food-borne pathogens monitoring workbook,samples of 12 categories sold in Kaifeng City were randomly selected and detected. Results A total of 294 samples were detected from 2016 to 2018, of which 67 strains of pathogenic bacteria were detected in 51 samples. The detection rate of pathogenic bacteria was 17.35 %. Salmonella,Campylobacter jejuni and Vibrio parahaemolyticus were the main food borne pathogens. The highest detection rates were raw poultry(95.00 %), cooked rice noodles(56.25 %), aquatic products(25.45 %)and animal blood products(25.00 %). Conclusions The contamination of pathogenic bacteria in food sold in Kaifeng City is generally good, but there are still potential safety hazards in some categories. Measures must be taken to strengthen supervision and management to prevent the occurrence of food-borne diseases.
