摘要
维生素C是一种人体必需的水溶性维生素,它广泛存在于新鲜的水果和蔬菜中。维生素C参与多种生物化学功能,能增强机体免疫力,维护人体正常生理机能,人们每天需要摄入足量的维生素C以供人体正常运转。本文简要介绍了测定果蔬中维生素C含量的方法,主要包括光谱法、容量法、色谱法、电化学分析法等方法,同时还对比分析了各种方法的优缺点,为维生素C的检测标准提供了一些参考。
Vitamin C is an essential water-soluble vitamin found in fresh fruits and vegetables. Vitamin C is involved in a variety of biochemical functions, which can enhance the body’s immunity, maintain the normal physiological function of the human body, so people need to absorb enough vitamin C every day for the normal functioning of the human body. The methods for the determination of vitamin C in fruits and vegetables were introduced briefly, including spectral method, volumetric method, chromatographic method, and electrochemical analysis method, etc. In addition, the advantages and disadvantages of various methods were compared and analyzed, providing some references for the determination standard of vitamin C.
