对破壁处理灵芝孢子粉功能特性的测定与分析 被引量:2

Determination and Analysis of Functional Characteristics of Ganoderma Lucidum Spore Powder Treated by Wall-breaking Technique

摘要 采用球磨法对灵芝孢子粉进行破壁处理,测定对比灵芝孢子粉破壁前后的水分、粗蛋白、粗脂肪和灰分的溶出量,粗多糖和总三萜的生物活性物质溶出量,测定分析了水、醇提取物DPPH·、ABTS·清除能力和还原能力。结果表明:灵芝孢子粉破壁前后水分和灰分变化不显著,粗蛋白溶出量增加了33.96%,粗脂肪溶出量提高了2.94倍;灵芝孢子粉粗多糖和总三萜活性物质溶出量分别增加了40.90%和55.21%;破壁后灵芝孢子粉抗氧化能力显著提高。 Ganoderma Lucidum spore powder was treated by ball grinding to obtain wall-broken Ganoderma lucidum sporoderma powder.The water content,crude protein,crude fat and ash content of broken and unbroken Ganoderma Lucidum spore powder,as well as the active substances of crude polysaccharides and total triterpenoids were determined and compared.The removal capacity and reducing capacity of water and alcohol extracts DPPH and ABTS radicals were determined and analyzed.The results show that the changes in water and ash content of Ganoderma Lucidum spore powder before and after wall breaking were not significant,crude protein dissolved out increased by 33.96%,crude fat dissolved out increased by 2.94 times,and the amount of polysaccharides and triterpenoids dissolved out in Ganoderma Lucidum spore powder increased by 40.90%and 55.21%,respectively.The anti-oxidation ability of Ganoderma Lucidum spore powder was improved significantly after the wall-breaking.
