琼脂-明胶可食性抗菌膜制备及其性能研究

摘要 可食性食品包装膜具备安全和环保的优点,是目前食品包装材料行业的研究热点之一,但鲜有以琼脂或明胶为基材的可食性包装膜的研究。为了丰富可食性包装的基材种类,以琼脂和明胶复配并添加抗菌剂Nisin制备出可食性抗菌包装膜并研究其性能。结果表明:该抗菌膜具有较好的阻隔性能和透明性,对微生物起到一定的抑制作用。随着Nisin添加量的增加,该抗菌膜的阻湿和抗菌能力有所增加,但透明性逐渐降低。 Edible food packaging film has the advantages of safety and environmental protection,which is one of the research hotspots in the food packaging material industry,however,there are few studies on edible packaging films based on agar or gelatin.In order to enrich the types of edible packaging base materials,the edible antibacterial packaging film was prepared by mixing agar,gelatin and nisin.The properties of the film were studied,the results showed that the antibacterial membrane had good barrier performance and transparency,and had a certain inhibitory effect on microorganisms.With the increase of nisin content,the moisture resistance and antibacterial ability of the antibacterial membrane increased,but the transparency decreased gradually.
