2017年-2018年绍兴市越城区食品安全风险监测分析 被引量:5

Monitoring and analysis of food security in Yuecheng District,Shaoxing from 2017 to 2018

摘要 目的了解绍兴市越城区食品中化学物及有害因素、微生物及致病因子污染水平和趋势,及时发现食品安全隐患,为食品安全风险评估和制定合理的控制措施提供科学依据。方法按照《食品安全国家标准》和《国家食品污染物和有害因素风险监测工作手册》,从绍兴市越城区不同食品流通环节采集各类样品进行检测,并对结果进行分析。结果2017年-2018年共检测食品样品1245份,合格1173份,合格率为94.2%。其中化学污染物监测样品864份,合格824份,合格率为95.4%,不合格样品和指标主要为梭子蟹(蟹黄、蟹膏)中的镉、即食海蛰中的铝等。微生物监测样品381份,合格349份,合格率为91.6%,食品污染较多的病原菌主要是副溶血性弧菌、溶藻弧菌、蜡样芽胞杆菌、单核细胞增生李斯特菌、沙门菌等。结论越城区食品合格率较高,但部分食品仍存在一定安全隐患。 Objective To understand the contamination level and trend of chemical substances,harmful factors,microorganism and pathogenic factors in food in Yuecheng District of Shaoxing and to discover the potential threats in food in time,as well as to provide scientific basis for food safety risk assessment and reasonable control measures.Methods All kinds of samples were collected from different food circulation links in Yuecheng District of Shaoxing for testing in accordance with National Standards for Food Safety and National Manual for Monitoring Risks of Food Pollutants and Harmful Factors,and the results were analyzed.Results From 2017 to 2018,a total of 1245 food samples were monitored,among which 1173 samples were qualified,with the pass rate of 94.2%.864 chemical polluted food samples were monitored,among which 824 samples were qualified,with the pass rate of 95.4%.The unqualified samples and indicators were mainly cadmium in swimming crab(crab yellow,crab paste)and aluminum in instant jellyfish.381 food samples with microbial pathogen infection are monitored,among which 349 samples were qualified,with the pass rate of 91.6%.The largest pathogenic bacteria in polluted food were Vibrio parahaemolyticus,Vibrio alginolyticus,Bacillus ceeeus,Listerria monocytogenes and Salmonella.Conclusion The passing rate of food is in a higher level in Yuecheng District,and there is some kind of potential threats in food security.
