摘要
此次试验旨在深入研究有机氯农药残留对火龙果维生素C抗氧化活性的影响。研究结果表明:有机氯农药残留对火龙果维生素C抗氧化能力有明显的抑制作用。有机氯农药残留清除的最佳条件:用1.1%碳酸氢钠和16.9%氯化钠混合溶液浸泡,再清水冲洗9.1 min,在此条件下,其对火龙果维生素C抗氧化活性影响较小,总抗氧化能力较强。
The effect of organochlorine pesticide residues on antioxidant activity of vitamin C from pitaya was studied in this paper.The results showed that organochlorine pesticide residues had a significant inhibitory effect on the antioxidant activity of vitamin C from pitaya.The optimum removal conditions of organochlorine pesticide residues were soaking in 1.1%sodium bicarbonate and 16.9%sodium chloride mixed solution and rinsing with clean water for 9.1 min.Under these conditions,the antioxidant activity of vitamin C from pitaya was slightly affected,and the total antioxidant capacity was stronger.
