摘要
当前高校食堂食品安全管理重点包括食品原材料采购、存储管理,食品加工监管,食堂硬件及卫生问题,从业人员食品安全意识。高校食品安全管理策略包括严格把控关键环节,加强食堂工作人员专业化培训与指导,构建严格的高校食品安全监管体系,建立有效的食品安全突发事件应急处理预案,加大食堂信息透明化。
At present, the key points of food safety management in university canteen include food raw material purchase, storage management, food processing supervision, canteen hardware and health issues, and food safety awareness of employees. The strategies of food safety management in Colleges and universities include strict control of key links, strengthening the professional training and guidance of canteen staff, building a strict food safety supervision system, establishing an effective emergency response plan for food safety emergencies, and increasing the transparency of canteen information.
