摘要
紫苏是唇形科紫苏属一年生草本植物,具有极高的食用价值和药用价值。本文首先介绍了紫苏中常见的几种多酚类化合物,综述了紫苏多酚抗氧化活性及其抗氧化机制的研究进展,然后阐述了多酚化合物在食品加工、医疗卫生和日用化妆品等领域的开发应用,最后对紫苏多酚抗氧化研究进展作了总结及展望,旨在为紫苏多酚的开发应用提供理论参考。
Perilla Frutescens is an annual plant in Labiatae with a high edible and medicinal value.In order to provide a theoretical reference for the development and application of perilla polyphenols,this paper firstly introduces several common polyphenol compounds in perilla frutescens,then reviews the antioxidant activity and its antioxidant mechanism of Perilla polyphenols,and describes the development and application of polyphenols in food processing,medical care and daily cosmetics fields.Finally,this paper summarizes and prospects the research progress of perilla polyphenols antioxidant.
