摘要 饮食结构过于精细化造成的最大问题是膳食纤维的缺乏,而膳食纤维作为人体必不可缺的营养素之一,其受重视程度也在不断提高。果蔬富含膳食纤维,而对于果蔬加工副产物中的膳食纤维进行提取应用,可以达到一举两得的效果。目前果蔬膳食纤维主要应用于加工食品,同时在其他方面的应用也值得研究与开发。本文总结了其在各方面的应用。 Tthe short of dietary fiber has become the biggest problem caused by people’s dietary structure over refinement, and the dietary fiber as one of the essential nutrients for human body, people pay more and more attention to it. Fruits and vegetables have lots of dietary fiber, especially the extract and application of the by-product of fruits and vegetables can achieve the effect of killing two birds with one stone. Fruit and vegetable dietary fiber are applied mainly in food aspect, while in other aspects are worth researching and developing too. This paper summarizes the application of fruit and vegetable dietary fiber in many aspects.
