Investigation of hygienic status of online ordering food in ShanXi Province in 2018

摘要 目的了解2018年山西省网络订餐餐饮食品的卫生状况,为网络订餐餐饮食品相关标准的制定及安全监管提供数据依据。方法按照2018年《山西省食品安全风险监测方案》要求,全省11个市疾病预防控制中心通过近年消费量大、人气高的网络订餐服务平台,对其经营的米面制品、中式凉拌菜、热菜、盒饭(饭菜混合)四大类食品下单进行采购。按照2018年《全国食源性致病菌监测工作手册》规定的检测方法对食品样本进行微生物学检测。结果2018年抽检网络订餐餐饮食品共194份,合格样品168份,总体合格率为86.6%。其中热菜合格率最高为100%,中式凉拌菜合格率最低,仅为80.2%。不合格项为大肠埃希菌超标和食源性致病菌。抽检的194份样品中共检出食源性致病菌35株,总体阳性检出率为18.0%;其中蜡样芽孢杆菌污染最为严重,检出27株,检出率为13.9%;其次为金黄色葡萄球菌。结论山西省网络订餐餐饮食品总体卫生情况不容乐观,主要体现在大肠埃希菌超标严重;中式凉拌素菜和米面制品微生物的污染严重,特别是易受蜡样芽胞杆菌和金黄色葡萄球菌的污染,对民众的健康存在一定的威胁,应引起食品药品监管部门的重视。 Objective To understand the health status of online food ordering in Shanxi Province in 2018,and provide data basis for the establishment of relevant standards and safety supervision of online food ordering.Methods In accordance with the"food safety risk monitoring plan in Shanxi Province"in 2018,the 11 city Centers for Disease Control(CDC)through in recent years,consumption of large,high popularity of the network reservation service platform,higher risk to its business mainly includes microbial contamination of rice flour products,Chinese cold dishes,hot food,box lunch(mixed meals)and microbiological testing of food samples according to the test method specified in the 2018 National Foodborne Pathogens Monitoring Workbook.Results In 2018,194 samples of four types of online catering food were sampled,and 168 samples were qualified,with an overall qualified rate of 86.6%.Among the 194 samples sampled,35 strains of food-borne pathogenic bacteria were detected,and the overall positive detection rate was 18.0%.Among them,bacillus cereus was seriously contaminated,27 strains were detected,and the detection rate was 13.9%.Next were staphylococcus aureus.Conclusion The overall health situation of online food ordering in Shanxi Province is not optimistic.Rice noodles and their products and Chinese cold vegetables are easily contaminated by microorganisms,especially by bacillus cereus and staphylococcus aureus,which pose a certain threat to people′s health and should be paid attention to by the food and drug regulatory authorities.
