摘要
[目的]探讨小麦富硒性能和萌发特性。[方法]研究不同亚硒酸钠浓度对小麦种子萌发特性及硒富集量的影响,分析不同小麦品种的硒富集能力差异。[结果]高浓度亚硒酸钠胁迫小麦种子的萌发,降低种子的发芽率、发芽势、发芽指数和活力指数;随着Na2SeO3浓度的升高,小麦的含硒量升高。综合考虑发芽率、发芽势、发芽指数、活力指数及有机硒的转化比率等指标,以Na2SeO3浓度200 mg/L处理比较适合富硒麦芽的生产;不同品种小麦对硒的富集转化差异达极显著水平,以蛋白质含量高的品种更有利于硒的吸收和转化。[结论]该研究为硒营养强化小麦芽的应用和生产提供参考。
[Objective]To explore the Se enrichment and germination characteristics of wheat.[Method]Effect of sodium selenite stress on germination characteristics and Se enrichment of wheat seeds were studied,and the difference of Se enrichment ability of different wheat varieties was analyzed.[Result]High concentration of sodium selenite stressed germination of wheat seed,reduced the germination rate,germination potential,germination index and vigor index of seeds;with the increase of sodium selenite concentration,the selenium content of wheat increased;considering the indexes of germination rate,germination potential,germination index,vigor index and organic selenium conversion rate,the results showed that the treatment of sodium selenite concentration 200 mg/L was more suitable for the production of selenium rich malt;different varieties of wheat had a significant effect on the enrichment and transformation ability of selenium.The varieties with high protein content were more conducive to the absorption and transformation of selenium.[Conclusion]This research can provide reference for the application and production of selenium fortified malt.
