摘要
莲子是我国特有的优质资源,也是一种良好的药食同源原料,广泛应用于食品、医药及化工等领域。莲子淀粉溶解度低、凝沉性强和易老化等特性限制了其应用价值,使用不同改性方法可以改变淀粉的加工性质。综述了莲子淀粉的性质和改性方法,包括机械化处理、超高压处理、微波处理和热处理等改性技术,阐述了目前莲子改性淀粉的产品应用,为其他改性技术应用于莲子淀粉提供参考,以期能够丰富莲子淀粉产品的种类,拓宽莲子淀粉的应用领域。
Lotus seed is not only a unique high quality resource in China,but also a good raw material for medicine and food.It is widely used in food,medicine and chemical industry.However,lotus seed starch has low solubility,strong retrogradation and easy aging,which limits its application value.Different modification methods can change the processing properties of starch.This paper reviewed the modification methods currently applied to lotus seed starch,including mechanical treatment,ultra-high pressure treatment,microwave treatment and heat treatment.It provided dreferences for other modification technologies applied to lotus seed starch,in order to enrich the varieties of lotus seed starch products and broaden the application fields of lotus seed starch.
