摘要
滑菇菌渣为基料发酵生产酒精。利用液态法发酵酒精,进行菌渣添加量、酵母添加量、葡萄糖浓度、pH值、发酵天数等工艺条件的优化,在单因素实验基础上,通过正交试验,以酒精转化率为目标值进行进一步工艺优化。菌渣添加量为16%,葡萄糖浓度10%,酵母以原料的0.35%添加,初始pH值5.5,发酵时间7 d,所得酒精转化率最高为95.03%。研究表明:以滑菇菌渣为基料发酵生产酒精的工艺可行,可以达到菌渣的回收利用,为食用菌菌渣的进一步开发利用提供了一条新途径。
Alcohol was produced by using Pholiota nameko dreg as fermentation raw materials.The alcohol was produced by the liquid method,in which the technological conditions of adding amount of Pholiota nameko dreg,adding amount of yeast,glucose concentration,pH value and fermentation days were optimized.On the basis of the single factor experiment,the four-factor three-level orthogonal test design was carried out.Alcohol conversion rate was taken as the detection index.When the amount of Pholiota nameko dreg was 16%,glucose concentration was 10%,the yeast was added with 0.35%of raw material,the initial pH value was 5.5,and the fermentation time was 7 days,the highest conversion rate of alcohol was 95.03%.The results show that the technology of alcohol production from fermented Pholiota nameko dreg as substrate is feasible,which can achieve the utilization of Pholiota nameko dreg and provide a new way for further utilization.
