明绿液老窖泥化学元素组成检测与分析 被引量:1

摘要 明绿液白酒是安徽明光酒业有限公司的硬核产品,是几代工匠奋斗的成果。明绿液白酒风格突出、品质优良,与其窖泥有着密切关联。以明绿液老窖泥为材料,采用现代仪器分析手段对其化学元素进行了检测,共检出老窖泥化学元素31种,按含量多少排列如下:硅、铝、碳、铁、钾、氢、氮、镁、钙、钠、钛、锰、钡、氯、锌、锆、磷、铷、锶、钒、铬、镧、铜、钇、镍、硫、铅、镓、铌、钴和溴。其中,硅、铝、钛、锰、钡、氯、锌、锆、铷、锶、钒、镧、钇、镍、镓、铌、钴和溴等18种窖泥化学元素为首次报道。从土壤重金属安全性分析,铅、铬、铜其含量处于安全标准值以下。项目对明绿液老窖泥化学元素摸底性检测,为明绿液窖泥生产与维护提供了参考,对深入探讨明绿液酿酒微生物生长环境及酿酒机理起到积极作用。 Baijiu Minglvye is the hard core product of Anhui Mingguang winery Co.,Ltd.and originates from several generations of craftsmen.The quality of Baijiu Minglvye is excellent and stable,which is closely related to pit mud.In this paper,the chemical elements of the pit mud of Baijiu Minglvye were detected by modern instrumental analysis.A total of 31 chemical elements of the pit mud were detected,which were arranged as follows:silicon,aluminium,carbon,iron,potassium,hydrogen,nitrogen,magnesium,calcium,sodium,titanium,manganese,barium,chlorine,zinc,zirconium,phosphorus,rubidium,strontium,vanadium,chromium and chromium,Lanthanum,copper,yttrium,nickel,sulfur,lead,gallium,niobium,cobalt and bromine.Among them,18 chemical elements of pit mud,such as silicon,aluminium,titanium,manganese,barium,chlorine,zinc,zirconium,rubidium,strontium,vanadium,lanthanum,yttrium,nickel,gallium,niobium,cobalt and bromine,were first reported.According to the safety analysis of heavy metals in soil,the contents of lead,chromium and copper are below the safety standard.The detection of chemical elements in the pit mud of Baijiu Minglvye provides data for the production and maintenance of the pit mud,and plays a positive role in further exploring the microorganisms and liquor-making technology of Baijiu Minglvye.
