摘要
主要运用平板厌氧技术对中高温大曲整个制作过程和窖泥中耐稀氧含量菌株进行了筛选,共筛选出17株耐稀氧含量的细菌,并通过菌落形态、菌株形态的分析比较以及16S rDNA序列分析等,对这17株细菌进行分类鉴定。同时检测其酶活及生长特性为下一步运用于白酒酿造做准备。
This paper mainly focused on the whole production process of medium and high temperature Daqu and the application of plate anaerobic technology to screen out 17 strains of bacteria resistant to dilute oxygen content in pit mud,and classified and identified these 17 strains through the analysis and comparison of colony morphology,strain morphology and 16S rDNA sequence analysis.At the same time,the enzyme activity and growth characteristics were tested to prepare for the next application in liquor brewing.
