摘要
茶叶中的有效成分品种繁多,在二十种有效成分中,咖啡因与茶多酚的含量与其苦涩程度息息相关。通常来说,茶多酚是指儿茶素一类,而其中的没食子酸对茶叶的品质影响较大,目前测定茶叶中的咖啡因、生物碱和茶多酚主要采用高效液相色谱法。介绍了高效液相色谱法以及具体应用于测定茶叶中的有效成分含量的具体研究。
There are many kinds of effective ingredients in tea.Among the twenty effective ingredients,the content of caffeine and tea polyphenols is closely related to its bitterness.Generally speaking,tea polyphenols refer to catechins,and gallic acid has a greater effect on the quality of tea.At present,the determination of caffeine,alkaloids and tea polyphenols in tea mainly uses high performance liquid chromatography.This paper introduces high-performance liquid chromatography and specific research specifically applied to determine the content of active ingredients in tea.
