家禽质量安全现状、危害分析与控制对策

Status, Hazard Analysis and Control of Quality and Safety of Poultry

我国是家禽生产和消费大国,禽肉、禽蛋已成为人们日常生活中不可或缺的重要动物源性食品,其质量安全关系到国计民生、社会稳定和产业发展。由于家禽生产中存在品种质量良莠不齐、环境污染、投入品(饲料、兽药)不科学使用以及监控技术体系不健全等问题,导致产品质量安全风险较大。文章从家禽产品质量安全现状、存在的风险及控制技术研究进展等方面进行了阐述和分析,并提出我国家禽生产质量安全控制的对策建议。

China is a major producter and consumer of poultry, poultry meat and egg have become indispensable animal-origin food in people′s daily life. It′s quality and safety are related to the national economy and people′s livelihood, social stability and the industrial development. Because there are intermingled varieties in the poultry production quality, environmental pollution, misuse of inputs(feed, veterinary drugs) and imperfect monitoring technology system,which lead to the risk of products quality and safety. This paper summarized the safety status, risks and control technologies of poultry products, and put forward the countermeasures of poultry production quality and safety control in china.
