Effects of Different Storage Conditions on the Respiration of Eggs

摘要 贮存期鸡蛋呼吸强度随外界贮存条件的变化而变化,为了更进一步明确贮存条件对鸡蛋呼吸强度的影响,选取同一品种的鸡蛋作为实验样本,将其分为3组,分别置于湿度为65%RH和温度分别为4、25、35 ℃,温度为22 ℃和湿度分别为30%RH、60%RH、90%RH,温度为25 ℃、湿度为65%RH和CO2浓度分别为1.5%、3.0%和4.5%的条件下贮存20 d,利用呼吸测定仪进行鸡蛋的呼吸强度测定,研究不同贮存条件下呼吸强度的变化情况。结果表明:在不同温度条件下,鸡蛋呼吸强度与贮存时间呈负相关关系,且受温度影响显著,随着温度的降低,呼吸强度变化幅度变小,当鸡蛋于4 ℃冷藏时,其呼吸强度趋于稳定,且数值较小。CO2浓度对鸡蛋呼吸强度变化影响显著,增加CO2浓度对鸡蛋呼吸强度具有抑制作用,当CO2浓度高于3.0%时,其抑制效果不再明显增强。此外,鸡蛋的呼吸强度受湿度变化影响较小。 Respiration intensity of eggs during storage varies with external storage conditions.In order to clarify the effect of storage conditions on the respiratory intensity of eggs,the same breed eggs are selected as experimental samples in the experiment.The experimental samples are divided into 3 groups.The first group experiment is made in condition that the humidity is 65%RH and temperature is 4 ℃,25 ℃,35 ℃.The second group experiment is made in condition that the temperature is 22 ℃ and humidity is 30%RH,60%RH and 90%RH.The third group experiment is made in condition that temperature is 25 ℃,humidity is 65%RH and CO2 concentration is 1.5%,3.0% and 4.5%.The three experimental samples are stored in above conditions 20 days.Make use of the breath meter to measure the respiratory intensity of eggs,and study the change of respiratory intensity under different storage conditions.The results showed that under different temperature conditions,the respiratory strength of eggs had a negative correlation with storage time and significant influence by temperature.As the temperature decreased,the range of respiratory strength changed becomes smaller.CO2 concentration had a conspicuous effect on the changes in egg breathing intensity,the respiratory strength of egg was inhibited by increasing CO2 concentration,its inhibitory effect was no longer notably enhanced when the CO2 concentration was higher than 3.0%.In addition,the breathing intensity of eggs was less affected by changes in humidity.
