酸度计连续滴定法测定葡萄汁中总酸和氨基氮的质量浓度 被引量:6

摘要 氨基氮和有机酸是葡萄汁的重要成分,会对酿酒过程和新酿制的葡萄酒品质产生一系列的影响。为了快速准确地测定葡萄汁中氨基氮和总酸的质量浓度,研究和改进了传统的质量浓度检测方法,采用连续滴定法一次完成测定。对测定结果进行了对比,结果表明两种方法基本一致,但连续滴定法更为高效。
