摘要
茶叶入菜,是茶叶与食材通过烹饪融合成菜,即茶菜。茶菜科学地将茶叶与食材通过精湛的烹饪技艺,融入药食同源的食疗养生理论,将茶叶的食疗养生保健功效通过茶食的形式展现和利用。茶菜的融合创新,需要根据茶叶的加工制作工艺所形成的属性,结合食材的属性,因时因人地进行科学配伍,并根据科学的烹饪原理,运用恰当的烹饪技法、调味技法,制出茶叶与菜融合的创新茶菜、茶点和茶宴。
Adding tea into dishes means the combination of tea and ingredients into dishes,which are called tea dishes.It has a long history and plenty of varieties.Scientifically,the tea and the ingredients are passed through exquisite cooking techniques with the theory of health care involved.The tea dish which is somehow ho⁃mologous to medicines and foods,is used to present and utilize the health benefits of tea in the form of tea.The addition of tea into dishes is innovative,and it needs to be based on the attributes formed by the processing and production process of tea,combined with the attributes of the ingredients.The tea dish should be made due to the compatibility of human science,and be a part of a dish with the appropriate form.What’s more,it also need to be made according to the scientific cooking principle,the use of appropriate cooking and seasoning tech⁃niques.By doing so,more innovative tea dish,tea dessert,and tea banquets could be invented.
