东北林蛙卵油脂肪酸成分分析及其氧化稳定性研究

Research on Fatty Acid Composition and Oxidation Stability from Ovum Oil of Rana dybowskii

为研究林蛙卵油的脂肪酸成分、多不饱和脂肪酸的富集工艺及氧化稳定性,将提取得到的东北林蛙卵油中的脂肪酸进行GC-MS检测,对尿素包合法分离纯化多不饱和脂肪酸进行正交试验,并将林蛙卵油在不同条件下储存0,6,12,18,24,30 d,测定各组的过氧化值。结果表明:林蛙卵油中含有18种脂肪酸,不饱和脂肪酸总含量为76.76%,多不饱和脂肪酸含量为40.25%;多不饱和脂肪酸富集工艺的最优条件:脲脂比为2、包合温度为-20℃、包合时间为15 h;林蛙卵油在-20℃、避光条件下保存,过氧化值变化最小。

In order to study the components of fatty acids,polyunsaturated fatty acid enrichment process and oxidation stability in the ovum oil of Rana dybowskii,fatty acids extracted from the ovum oil of Rana dybowskii were detected by GC-MS.Polyunsaturated fatty acids were separated and purified by urea package,and orthogonal test was performed.The ovum oil was stored in different conditions for 0,6,12,18,24 and 30 days.In the end,the oxidation stability was determined.Results showed that 18 kinds of fatty acids were separated from the ovum oil,the total content of unsaturated fatty acids was 76.76%,and the content of polyunsaturated fatty acids was 40.25%.The optimal conditions of polyunsaturated fatty acid enrichment process were urea-fat ratio of 2,inclusion temperature of-20℃and inclusion time of 15 h.When ovum oil was stored at-20℃in the dark,the minimal change of peroxide value was found.
