摘要 本文以深州蜜桃为研究对象,对比了贮藏温度3℃~4℃,相对湿度90%的普通冷库与贮藏温度-0.7℃,相对湿度90%的冰温库下蜜桃的品质差异。通过实验测试发现冰温贮藏下的蜜桃失重率小,呼吸强度在30天内抑制效果明显,延缓了糖类等可溶性固形物的分解,POD活性在50天里低于普通冷库的贮藏,延缓了蜜桃的衰老与腐烂。 This paper takes Shenzhou peaches as the research object,and compares the quality difference of peaches which were stored in an ordinary cold room with a storage temperature of 3℃~4℃and the relative humidity of 90%and an ice-temperature store with a storage temperature of-0.7℃and a relative humidity of 90%.It finds that with the increase of storage time,the weight loss rate of peaches under ice-temperature storage is smaller,and the inhibition effect of respiratory intensity within 30 days is obvious,which delays the decomposition of soluble solids.POD activity is lower than that of ordinary cold storage in 50 days,the senescence and rot were delayed.
