白酒固态发酵温度可视化分析系统研究 被引量:4

摘要 针对白酒固态发酵对窖池温度监测方法存在采样位置不精确,测量数据不能可视化分析的问题,设计了白酒固态发酵温度可视化分析系统。该系统由窖池温度采集模块和数据可视化模块构成,温度采集使用数字式融合温度传感器,采集窖池上、中、下三层,共计27个温度采集点的数据,使用专业数据分析软件可视化分析白酒固态发酵温度变化的过程。实验结果表明,温度可视化系统运行稳定,对发酵温度变化情况分析准确。 In order to solve the problems of inaccurate sampling location and non-visualization of measurement data in temperature monitoring of solid-state fermentation pits of Baijiu production,we developed a visualization analysis system for temperature monitoring of solid-state fermentation of Baijiu.The system is composed of a temperature acquisition module and a data visualization module.The temperature acquisition module used digital fusion temperature sensors to collect the data of 27 sampling points in the upper,the middle and the lower layer of the pit.The temperature change process of solid-state fermentation was visualized with professional data analysis software.The experimental results showed that the temperature visualization system ran stably,and analyzed the fermentation temperature accurately.
