窖泥中高产己酸功能菌的分离筛选及代谢功能的研究

摘要 窖泥是己酸功能菌繁衍栖息的场所。该研究从原酒车间老窖泥中分离筛选得到了高产己酸的复合功能菌株,命名为HJ31#,该复合菌多数为革兰氏阴性杆菌。经条件优化及代谢功能研究,该复合功能菌的最适培养条件为培养温度34~36℃,最佳初始pH值为6.00~7.95,厌氧培养。在最适条件下,复合功能菌株HJ31#的己酸产量均可达到1000 mg/100 mL以上。 Pit mud is the habitat of functional caproic acid bacteria.In this study,the functional strains with high yield of caproic acid were isolated from the fine pit mud and named HJ31#.The strains were identified as gram-negative Bacilli.The culture conditions of the strains were optimized as follows:anaerobic culture at 34℃to 36℃,with initial pH of 6.00 to 7.95.Under the optimum conditions,the caproic acid yield of strain HJ31#could reach up to over 1000 mg/100 mL.
