摘要
众多研究表明,中国白酒中有很多生物活性成分是具有健康价值的。董酒作为董香型白酒代表,其生产工艺经过先辈们不断研究、改进,最终形成了“产酒单”和“产香单”分别用于制作大、小曲,不仅丰富了董酒的内涵,还赋予了董酒多种生物活性成分并形成平衡、协调的机理。本文介绍了董酒中富含的地衣素、苯丙氨酸、天冬氨酸、维生素E、维生素B6、丁酸、β-桉叶油醇、d-柠檬油精和钾的分子结构、特性和有关生理功能作用。
Past researches have shown that there are many bioactive substances in Chinese Baijiu that have healthcare value.The unique production process of Dongjiu have endowed it with various bioactive substances,and have formed its balanced and harmonious style.In this paper,we introduced the molecular structures,characteristics and physiological functions of the bioactive substances in Dongjiu,including lichenysin,phenylalanine,asparticacid,vitamin E,vitamin B6,butyric acid,β-eudesmol,D-limonene,and potassium.
