The mass transfer model during osmotic dehydration of fruits and vegetables,such as Peleg’s model,Page’s model,the second law of Fick and Weibull’s distribution model were mainly discussed.In addition,the application of mass transfer model in the process of osmotic dehydration of fruits and vegetables was explained in detail,and the application of the mass transfer model in the aspect of fruit and vegetable preservation was prospected.
