N-氨甲酰谷氨酸对快大型肉鸡生长性能、血清生化指标、屠宰性能及肌肉品质的影响 被引量:4

Effects of N⁃Carbamylglutamate on Growth Performance,Serum Biochemical Indexes,Slaughter Performance and Meat Quality of Broilers

摘要 本试验旨在研究N-氨甲酰谷氨酸(NCG)对快大型肉鸡生长性能、血清生化指标、屠宰性能及肌肉品质的影响。选取健康且体重相近的1日龄爱拔益加(AA)肉鸡400只,随机分为5组,每组8个重复,每个重复10只鸡(公母各占1/2)。对照组饲喂基础饲粮,试验组分别添加0.04%、0.08%、0.12%和0.16%的NCG,试验期42 d。结果表明:1)与对照组相比,饲粮中添加0.12%NCG显著提高肉鸡生长前期(1~21日龄)、生长后期(22~42日龄)和生长全期(1~42日龄)的平均日增重(P <0.05),添加0.08%NCG显著提高肉鸡生长后期的平均日增重(P <0.05)。2)0.08%NCG试验组肉鸡血清总蛋白含量显著高于对照组(P<0.05),而添加NCG对血清白蛋白含量及谷丙转氨酶和谷草转氨酶活性无显著影响(P>0.05)。3)与对照组相比,饲粮中添加0.12%NCG显著提高肉鸡的胸肌率(P<0.05),添加NCG对肉鸡全净膛率、腿肌率和腹脂率无显著影响(P>0.05)。4)添加NCG对肉鸡肌肉的滴水损失、剪切力和pH无显著影响(P>0.05)。由此可见,饲粮中添加NCG有助于改善肉鸡的生长性能和屠宰性能,且对肉鸡的肌肉品质无负面影响。回归分析表明,肉鸡饲粮中NCG适宜添加水平为0.1%。 This experiment was conducted to investigate the effects of N⁃carbamylglutamate(NCG)on growth performance,serum biochemical indexes,slaughter performance and meat quality of broilers.Four hundred one⁃day⁃old AA broilers were randomly divided into 5 groups with 8 replicates in each group and 10 broilers in each replicate(half male and hale female).The broilers in the control group was fed a basal diet,and the ex⁃perimental groups fed the basal diet supplemented with 0.04%,0.08%,0.12%and 0.16%NCG,respectively.The experiment lasted for 42 days.The results showed as follows:1)compared with the control group,adding 0.12%NCG significantly increased the average daily gain(ADG)of broilers during early(1 to 21 days of age),late(22 to 42 days of age)and the whole(1 to 42 days of)growth period(P<0.05),and adding 0.08%NCG significantly increased the ADG of broilers during late growth period(P<0.05).2)Serum total protein content in 0.08%NCG group was significantly higher than that in the control group(P<0.05),while supplying NCG had no significant effect on serum total protein content and alanine transaminase and alanine transaminase activities(P>0.05).3)Compared with the control group,adding 0.12%NCG significantly in⁃creased the breast muscle rate(P<0.05),while adding NCG had no significant effect on the eviscerated per⁃centage,leg muscle percentage and abdominal fat percentage(P>0.05).4)There was no significant differ⁃ence among all groups in drop loss,shear force and pH(P>0.05).In summary,the addition of NCG to the diet can improve the slaughter performance and growth performance of broilers,and has no negative effect on the muscle quality of broilers.Regression analysis shows that the optimal supplemental level of NCG is 0.1%in the compound diet of broilers.[Chinese Journal of Animal Nutrition,2020,32(6):2631⁃2637]
