摘要 食用油脂是人们生活中的必备品,在食品加工中发挥着重要的作用。然而食用油脂在储存期间易发生氧化反应,对其风味、营养价值等均有不良影响,甚至可能产生毒性物质,威胁到人体健康。近年来,天然抗氧化剂因具有资源广泛、安全性高、毒副作用小的优势,已在食用油脂工业中得到了广泛应用。本文阐述了食用油脂储存中抗氧化剂的作用机制,并介绍多种天然抗氧化剂在食用油脂中的应用,旨在为油脂储存中天然抗氧化剂的开发应用提供参考。 Edible oil is a necessary product in people’s life and plays an important role in food processing.However,edible oil is prone to oxidation reaction during storage,which has adverse effects on its flavor and nutritional value,and may even produce toxic substances,which threaten human health.In recent years,natural antioxidants have been widely used in edible oil industry because of their advantages of wide resources,high safety and small toxic side effects.In this paper,the mechanism of antioxidant in edible oil storage is expounded,and the application of various natural antioxidants in edible oil is introduced,which aims to provide reference for the development and application of natural antioxidants in oil storage.
