服务地方经济社会发展,加强酿酒工程专业建设的探索与实践

摘要 酿酒工程专业是亳州学院本科招生的特色专业,是该校生物与食品工程系重点打造的服务皖北地区白酒特色产业的学科。酿酒工程专业是培养和塑造酿酒专业人才的重要载体,其专业建设对酿酒行业人才培养影响深远。本文对目前白酒产业、地方发展现状及问题进行分析,从课程体系、教学实践基地、师资队伍、教学团队、创新科研精神等方面提出酿酒工程专业建设路径,阐明该专业下一步建设内容和发展方向,以期为酿酒工程专业建设提供参考价值,服务地方社会经济发展。 The brewing Engineering Specialty is the characteristic specialty of undergraduate enrollment of Bozhou University,which is the key discipline of the Department of Biology and Food engineering to serve the liquor characteristic industry in Northern Anhui.The major of brewing engineering is an important carrier to cultivate and shape the talents of brewing industry,whose construction has a profound impact on the cultivation of talents in brewing industry.This paper analyzes the current situation and problems of liquor industry and local development,puts forward the construction path of liquor engineering specialty from the aspects of curriculum system,teaching practice base,teaching staff,teaching team,innovation and scientific research spirit,expounds the next construction content and development direction of the specialty,in order to provide reference value for the construction of liquor engineering specialty and serve the local social and economic development.
