摘要
本试验旨在固态发酵条件下研究微生物发酵蛋白补充料的工艺条件。以物料堆积高度、初始含水量、翻料温度和发酵时间4个因素为条件,利用DPS软件混料试验方案设计出8种不同发酵工艺,分别进行固态堆积发酵,以物料pH值、有机酸含量,酵母菌活菌数及3种营养活性物质含量为综合评价指标来确定最佳发酵工艺。结果显示:微生物发酵蛋白补充料最佳发酵工艺条件为:堆积料高为30 cm,初始含水量为47.3%,翻料温度为45℃和发酵周期48 h,此时物料中酵母菌活菌数达到9.77×10~7CFU/g、β-葡聚糖含量55.95 mg/g、甘露聚糖28.03 mg/g、多肽1.39 mg/g和有机酸4.70 mg/g。
The purpose of this experiment was to study the technological parameter of microbial fermentation protein supplement under the solid-state fermentation condition. With4 factors including stacking height of material,initial moisture content,temperature of turning process and fermentation time,8 different fermentation processes were designed using DPS software,respectively for solid-state stacking fermentation.The optimal technological parameter was determined by a comprehensive evaluation index,which includes pH value of material,organic acid content,number of living yeastand contentof 3 nutrient active substances.Results showed that the optimal technological condition was:stacking height 30 cm,initial water content 47.3%,temperature of turning process 45℃and fermentation period 48 h. Under this condition, living yeast number was 9.77 x10^7cfu/g, and the contents of β-glucan, mannan, polypeptides, organic acid were 55.95 mg/g, 28.03 mg/g, 1.39 mg/g, 4.70 mg/g in the material.
