基于Petri网的牛肉产品供应链安全追溯系统研究

Research on Safety Traceability System of Beef Product Supply Chain Based on Petri Net

肉食品安全是当前国际上普遍关注的重点社会问题。我国对包括牛肉产品在内的肉食品供应链安全管控方式以“终端检验”为主,而对于前期饲养、屠宰、物流配送等供应链环节的监管比较欠缺,难以实现全供应链的肉类产品安全追溯管理。在对食品供应链安全追溯理论及牛肉产品供应链模式系统分析基础上,通过引入Petri网理论,并融合射频识别(RFID)和标识编码等相关技术,构建并检验了牛肉产品供应链安全追溯流程的Petri网模型,并以牛肉生产供应链环节溯源信息为基础,设计了覆盖整个供应链的牛肉产品供应链安全追溯系统,并为实施牛肉产品供应链安全追溯管理和信息监控提出了建议。

Meat safety is a major social issue of general concern in the world.The supply chain security control of meat food including beef products in China is mainly based on the terminal inspection,but the supervision of supply chain links such as prophase feeding,slaughtering,logistics distribution are relatively insufficient,which makes it difficult to realize the safety traceability management of meat products in the whole supply chain.Based on systematic analysis on food supply chain safety traceability theory and the mode of beef product supply chain,by introducing the theory of Petri net and integrating related technologies such as RFID and identification coding,this paper constructs and tests the Petri net model of safety traceability process of beef product supply chain,and designs the safety traceability system of beef products covering the whole supply chain based on beef product supply chain and traceability information,and puts forward some suggestions for the implementation of safety traceability management and information monitoring of beef product supply chain.
