摘要 课程特别是专业基础课程是构成专业培养体系的基本单元,课程教学是人才培养的最基本形式。教师如何在课程教学过程中,做好教学内容的筛选与整合、新型教学形式采用及其他重点环节教学模式改革等工作,实现整体教学效果与质量提升,是建设一流专业和一流课程所必须面临和解决的问题。针对“食品工程原理”课程工程性强但又难学难教的现实情况,提出课程教学过程中不断进行改进的方法。 Courses,especially the professional basic courses,are basic units of professional training system.Course teaching is the most basic form of talent training.In course teaching,teachers should do a good job in the selection and integration of teaching contents,the adoption of new teaching methods and the reform of other key links in teaching model so as to achieve the overall teaching effect and quality improvement.It is a problem that must be faced and solved to build first-class professional and first-class courses.In view of the fact that the course on the Principle of Food Engineering is strong in engineering and difficult to learn and to teach,the method of continuous improvement in course teaching is put forward.
