摘要
通过对乳酸菌的生长特性及其功能性质进行概述,包括乳酸菌的生长曲线、最适生长温度、最适生长pH值、人工胃液耐受性、胆盐耐受性,及其改善肠道防御功能、降血脂功能和增强免疫力功能,为乳酸菌的培养、筛选和进一步研究利用提供基础理论指导。
This article through to the growth characteristic of lactic acid bacteria and their functional properties were summarized,including lactic acid bacteria growth curve,the optimum growth temperature,the optimum pH,the tolerability of artificial gastric juice and bile salt tolerance,and improved the intestinal defense,fall hematic fat and enhance immunity function,for the cultivation of the lactic acid bacteria,screening,and the basic theory,which provided guidance for further research.
