食品中汞与汞形态分析方法研究进展 被引量:3

Research progress on analysis methods of mercury and mercury speciation in food

摘要 汞是强毒性重金属元素,对人体的神经系统、肾、肝脏等组织都可产生不可逆的损害作用,给人体健康带来威胁。因此,食品中汞含量测定及其形态分析具有十分重要的意义。我们综述了近年来食品中总汞含量的测定方法和食品中汞形态的分析方法,预测便携式直接测汞仪和汞的多形态分析技术研究及标准化将是今后的研究重点,旨在为食品安全风险监测提供参考。 Mercury is a highly toxic heavy metal element that can cause irreversible damage to human nervous system,kidney,liver and other tissues,and poses a threat to human health.Therefore,the determination of mercury content in food and its speciation analysis are of great significance.This paper reviews the determination methods of mercury content and the analysis methods of mercury speciation in food in recent years.It is predicted that the research standardization of portable direct mercury meter and mercury polymorphic analysis technology will be the focus of future research,aiming to provide a reference for food safety risk monitoring.
