摘要
本试验旨在评估日粮磷水平对草鱼生长性能及肌肉抗氧化特性的影响。以平均初始体重为(283.15±3.29)g的720条草鱼为试验动物,日粮有效磷水平分别为1.0、2.5、4.0、5.5、7.0、8.5 g/kg,试验共开展8周,以研究有效磷水平对草鱼生长性能、肌肉组成、肉质特征及肌肉抗氧化能力。结果表明:日粮有效磷水平达到4.0 g/kg时,增长率显著提高(P<0.05),日粮有效磷水平达到5.5 g/kg时,血清磷水平显著提高(P<0.05)。8.5 g/kg有效磷组肌肉水分含量最高,4.0 g/kg有效磷组肌肉水分含量最低(P<0.05)。日粮有效磷水平为4.0 g/kg和5.5 g/kg时,草鱼肌肉粗蛋白质含量显著高于其他组(P<0.05)。日粮有效磷水平为5.5~8.5 g/kg时,肌肉粗脂肪含量显著低于1.0~4.0 g/kg g/kg组(P<0.05)。不同磷水平对肌肉剪切力和羟脯氨酸含量无显著影响(P>0.05)。日粮磷补充组显著提高了肌肉灭活羟基自由基、超氧化物歧化酶、过氧化氢酶、谷胱甘肽-S-转移酶活性和谷胱甘肽含量(P<0.05),而灭活超氧阴离子、谷胱甘肽还原酶和谷胱甘肽过氧化物酶活性随日粮有效磷的增加而显著降低(P<0.05)。结论:日粮适宜的有效磷水平可以改善草鱼生长性能、肉质和肌肉的抗氧化能力。
The purpose of this study was to evaluate the effect of dietary available phosphorus levels on the growth performance and antioxidant properties of grass carp.The grass carp with an initial body weight of(283.15±3.29)g was used as the experimental animal,and the available phosphorus level in the diet was 1.0,2.5,4.0,5.5,7.0 and 8.5 g/kg,respectively.The experiment was conducted for 8 weeks to study the effect of available phosphorus level on the growth performance,muscle composition,meat quality and antioxidant capacity of the grass carp.The results showed that the growth rate significantly increased when the dietary available phosphorus level reached 4.0 g/kg(P<0.05),and the serum phosphorus level significantly increased when the dietary available phosphorus level reached 5.5g/kg(P<0.05).The muscle moisture content was the highest in the 8.5 g/kg group and the lowest in the 4.0 g/kg group(P<0.05).When the dietary available phosphorus level was 4.0 g/kg and 5.5 g/kg,the crude protein content of grass carp muscle was significantly higher than that of other groups(P<0.05).When the dietary available phosphorus level was 5.5~8.5 g/kg,the crude fat content of muscle was significantly lower than that of the 1.0~4.0 g/kg group(P<0.05).Different phosphorus levels had no significant effect on muscle shear force and hydroxyproline content(P>0.05).Diet supplement phosphorus group significantly increased muscle inactivated hydroxyl free radical,superoxide dismutase,catalase and glutathione-S-transferase activity and glutathione levels(P<0.05),and to inactivate the ultra oxygen anion,glutathione reductase and glutathione peroxidase activity increased with the increase of available P in the diet significantly reduced(P<0.05).Conclusion:suitable dietary available phosphorus level can improve the growth performance,meat quality and muscle antioxidant capacity of grass carp.
