摘要
为制梗丝主要加工工艺技术参数的优化及工艺控制的改进提供技术支撑,选择C3F醇化烟梗为制梗丝原料,采用气相色谱/质谱联用仪测定及独立样本T检验方法,研究制梗丝过程中主要热处理工序加工对烟梗原料致香成分含量的影响。结果表明:1)润梗后各致香成分的含量,醛类和酯类致香成分均升高,变化率分别为4.45%和7.91%,升幅均不显著;醇类和酮类致香成分均降低,变化率分别为-7.00%和-11.30%,醇类致香成分降幅不显著,酮类致香成分降幅达极显著水平;酸性致香成分降低,变化率为-14.53%,降幅达极显著水平;碱性致香成分升高,变化率为28.63%,升幅达极显著水平;中性致香成分润梗前后无明显变化。2)梗丝干燥后各致香成分的含量,醇类、酮类和酯类均升高,变化率分别为22.66%、2.68%和5.15%,醇类致香成分升幅达极显著水平,酮类和酯类致香成分升幅不显著;醛类降低,变化率为-25.76%,降幅达极显著水平;碱性致香成分降低,变化率为-40.04%,降幅达极显著水平;酸性和中性致香成分梗丝干燥前后无明显变化。
The effects of main heat treatment process on aroma component content in C3F alcoholized tobacco stem are studied during tobacco cut stem processing process by using gas chromatograph-mass spectrometer and independent sample T test method to provide the technical support for optimization of main process technology parameter and improvement of technology control for tobacco cut stem processing.Result:1)Aldehydes and esters aroma component content of tobacco stem after moistening increase with 4.45%and 7.91%variation rate,and the increase rate is not significant.Alcohols and ketones aroma component content of tobacco stem after moistening decrease with-7.00%and-11.30%variation rate.There is no significant decrease rate of alcohols,while there is a very significant decrease rate of ketones.Acidic aroma component content of tobacco stem after moistening decreases with-14.53%variation rate,and the decrease rate reaches a very significant level.Alkaline aroma component of tobacco stem after moistening increase with 28.63%increase rate,and the increase rate reaches a very significant level.There is no obvious variation in neutral aroma component content before and after tobacco stem moistening.2)Alcohols,ketones and esters aroma component content in tobacco cut stem after drying increase with 22.66%,2.68%and 5.15%variation rate.The increase rate of alcohols aroma component content reaches a very significant level,while the increase rate of ketones and esters aroma component content is not significant.Aldehydes aroma component content in tobacco cut stem after drying decrease with-25.76%variation rate,and the decrease rate reaches a very significant level.Alkaline aroma component content in tobacco cut stem after drying decrease with-40.04%variation rate,and the decrease rate reaches a very significant level.There is no obvious variation in acidic and neutral aroma component of tobacco cut stem before and after drying.
