摘要
针对目前少数生猪屠宰厂中出现的问题,如生猪不经过致昏而刺杀,极大地增加了生猪的痛苦,其拼命挣扎并发出的惨叫声,增大了环境噪声,不符合环保要求;使用老化的设备和工艺,宰后有些片猪肉(尤其是杂交瘦肉型生猪)的肩胛骨、脊椎骨和尾椎骨断裂及肌肉淤血,影响其胴体外观和质量;提出了生猪屠宰的福利要求,如在待宰间让生猪安静休息、洗澡、饮水,听轻音乐;经过致昏,减少其被刺杀的痛苦,实现生猪无悲伤、无恐惧和无痛苦的死去,既充分体现人道屠宰;同时又保证胴体的肉质达到良好。
In view of the problems that occurred in a few live pigs slaughter plants,such as the assassination of live pigs without stun,it had greatly increased the suffering of live pigs,and the desperate struggle and screams increased environmental noise and did not meet environmental protection requirements.Aging equipment and technology were used,some pieces of pork(especially hybrid lean live pig)scapula,vertebrae and caudal vertebrae fractured and muscle congestion after the slaughter affected the appearance and quality of the carcass.Welfare requirements for slaughtering live pigs were put forward,such as allowing live pigs to rest quietly,bathe,drink water and listen to light music in the slaughtering room;After stunned,it reduced the pain of being assassinated,and it realized the death of live pigs without sorrow,fear,and pain.This not only fully embodied the humane slaughter,but also ensured that the meat quality of carcass was good.
