Application of Infrared Heating Technology in the Processing of Red Jujube

摘要 以新疆南疆阿克苏地区红枣为原料,以红外干燥为基础,探讨红外加热干燥技术在红枣加工过程中的应用前景。红外干燥技术是辐射加热技术的一种,利用红外加热技术对红枣进行干燥具有加热速率快、耗能低、污染小等优点,目前红外干燥加热技术在食物烘烤、糕点制作中应用较为广泛。就红外加热的原理、优点及其发展做出简述,着重描述红外干燥技术在红枣加工中的应用,将红外干燥技术与其他干燥技术联合,并对红外联合干燥技术的应用前景提出展望。 The application of infrared heating drying technology in the processing of red jujube is discussed based on the infrared drying using red jujube as raw material in Aksu region of Southern Xinjiang. Infrared drying technology is a kind of radiation heating technology. Using infrared heating technology to dry red dates has the advantages of fast heating rate, low energy consumption and low pollution. At present, infrared drying and heating techniques are used in food baking and cake making widespread. The principle, advantages and development of infrared heating are briefly described. The application of infrared drying technology in red jujube processing is described, and the application prospect of infrared drying technology is put forward.
