摘要
抹茶的生产加工是我国未来茶产业可持续发展的重要方向之一,抹茶产品的发展给整个茶产业将会带来巨大的经济效益。优化抹茶加工工艺、提升抹茶品质也将成为我国未来抹茶生产的重要发展方向之一。归纳总结了目前已有的抹茶加工工艺和应用现状,并综述近红外检测技术在抹茶工艺中的研究进展,且基于红外检测技术,对茶叶内含成分的近红外在线检测、智能化拼配等方面的技术发展进行了问题分析及展望,为我国抹茶产业及近红外技术的进一步发展提供参考。
The production and processing of matcha is one of the important directions for the sustainable development of China’s future tea industry. The development of matcha products will bring huge economic benefits to the whole tea industry. Optimizing the processing technology of matcha and improving the quality of matcha will also become one of the important development directions of matcha production in China. Summarize the existing processing technology and application status of matcha, and summarize the research progress of near-infrared detection technology in matcha technology, based on infrared detection technology, the near-infrared online detection and intelligent integration of tea ingredients. The technical development of the other aspects has carried out problem analysis and prospects, providing reference for the further development of China’s matcha industry and near-infrared technology.
